Gold-foiled necks of Solà Raventós bottles reading “El cava de criança”

Long-aged cava · Sant Sadurní d’Anoia · since 1898

El cavade criança

One of the smallest cava houses: about 20,000 bottles a year, made by Pere and Guifré, father and son. Visits, tastings and a passion for cava.

Tuesday to Saturday, 9–14 h and 15–18 h

Time underground

What time does inside a bottle.

Our cavas rest between 2 and 5 years before they leave the cellar. Come down and watch what happens, month by month.

  1. Month 0

    Tirage

The base wine goes into the bottle with the yeast and is capped. The second fermentation begins, the one inside the bottle: this is where the bubbles are born.

  2. 9 months

    Guarda

The minimum the Cava D.O. asks of any cava. The lees, the yeast that did the work, rest along the side of the bottle. We are only getting started.

  3. 18 months

    Reserva

Second year in the cellar. Our Reservas arrive here.

  4. 20 and 26 months

    Coup de poignet

Profund gets a “coup de poignet” at 20 and 26 months: a flick of the wrist that stirs the lees back into the wine.

  5. 30 months

    Gran Reserva

Third year. The Gran Reserva line, home to De la Gafa, Sola II and Maria Roig, the crown jewel.

  6. 33 months

    Profund

Profund’s minimum ageing: 33 months. Just 133 magnums of rosé from the 2022 harvest.

  7. 44 months

    Tremendo

Tremendo is not released before 44 months, with coups de poignet at 30 and 36. Between 2 and 5 years: that is our time.

  8. Ready

    Neck down

When the time comes, the bottle is turned neck down and, little by little, the lees slide into the neck.

  9. Disgorging

    Now it’s ready

The neck is frozen, the bottle turned upright and opened: the plug of lees shoots out. Then cork, capsule and label. The label shows the disgorging date: we recommend drinking it within a year.

Who we are

One family, four dates.

1898

Solà Raventós is already making and ageing wine on the Maset de la Verdera estate.

1925

The first bottles of cava are made.

1987

It becomes Pere’s own project: with his wife he makes real the dream of making cava the way they understand and love it.

2018

Their son, Guifré, joins them.

About 20,000 bottles a year, in the building where it all began. A micro-production of two people.
